Ingredients

3 pkg. Regular or Rapid rises yeast

1/2 cup Warm water (105 to 115)

2 cups lukewarm milk (scalded then cooled)

1/4 cup sugar

1/2 tsp. salt

3 eggs

1/4 cup shortening

6 cups all purpose flour vegetable oil

Creamy glaze or chocolate glaze

Creamy glaze

1/4 cup butter

3 cups powered sugar

1 1/4 tsp. vanilla 4 to 6 Tbsp. hot water

Heat butter until melted; Remove from heat. Stir in powered sugar and vanilla until smooth. Stir in water, 1 tbsp. at a time, until desired Consistency.

Dissolve yeast in warm water in 2 1/2-quart bowl.
Add milk, salt, eggs, butter and 2 cups of flour. Beat at low speed, scraping bowl constantly, 30 seconds. Beat on medium speed scraping bowl occasionally, 2 minutes. Add the remaining flour until smooth. Cover and let rise in warm place until doubled, 50 to 60 minutes. (Dough is ready when indentation remains when touched.) Turn the dough onto a floured surface, roll gently to coat with flour. Gently roll the dough 1 / 2 inch thick with a floured rolling pin. Cut with donut cutter floured. Cover and let rise until double, 30 to 40 minutes. Heat oil in fryer to 350 degrees and then slide donuts into hot oil with wide spatula. Turn donuts as they rise to the surface. Fry until golden, about 1 minute per side. Remove carefully from oil (do not puncture the surface) drainage. Dip donuts in cream glaze set on rack then when slightly cooled spread chocolate glaze on top.



Donut:

5 ounces milk chocolate chips or semisweet chocolate chips

Dissolve yeast in warm water in a container with 2-1/2-quart. Add milk, salt, eggs, butter and 2 cups of flour. Beat on low for 30 seconds, scraping bowl constantly. Beat on medium speed for 2 minutes, scraping bowl occasionally. Add the remaining flour until smooth. Cover and let rise until double, 50 to 60 minutes. (Dough is ready when indentation remains when touched.) Turn the dough onto a floured surface, roll gently to coat with flour.

Gently roll the dough 1/2-inch thick with floured rolling pin. Cut with donut cutter floured. Cover and let rise until double, 30 to 40 minutes.

Heat oil in fryer to 350 degrees. Slide donuts into hot oil with wide spatula. Turn donuts as they rise to the surface.
Fry until golden, about 1 minute per side.

Dip the dough in cream glaze set on the grid, when a little cooled spread chocolate frosting on top.

Cream Glaze:
Heat butter until melted. Remove from heat. Add powdered sugar and vanilla until smooth. Add water, 1 tablespoon at a time, until desired consistency.

Chocolate coating: Melt the butter and chocolate over low heat until chocolate melts. Remove from heat. Add powdered sugar and vanilla until smooth. Add water 1 tablespoon at a time, until desired consistency.
