In this contemporary era, time is of the essence for everybody and therefore 'slaving over the stove' is something that is almost extinct thanks to modern cooking devices. Pressure cookers were invented in the year 1679 by a French physicist and even though this appliance has undergone a lot of changes for the better, the basic physical properties still remain the same. The common misconception is that the pressure cooker can be used only in kitchens for the purpose of cooking. This is not so and it can also be used for reasons like conducting sterilization in labs and for boiling water high up in the mountains where it is almost impossible for people to do the same courtesy of the low temperatures.

A pressure cooker can be defined as a pot which has a tight seal to prevent the steam from escaping out. Therefore when the water inside the cooker boils, it will release steam and since the steam is not allowed to escape therefore it increases the pressure inside the pot, making it a lot easier and faster to cook the food. The steam inside pressure cookers would permeate through the food and soften it while at the same time preserving its nutrients, juices, texture and even flavor.

Ordinary open-pots are designed in such a way that the boiling point of water, i.e. 100 degrees Celsius has to be attained for the purpose of cooking food. But in case of regular pressure cookers, the food is cooked at a temperature of 121 degrees Celsius on an average with a pressure of 1kg per square centimeter or 15 lb per square inch.

Using pressure cookers in the kitchen can help save a lot of time, without compromising on the taste of the food being cooked. The time taken by ordinary cooking is almost double of the time taken by pressure cooking. Therefore it is not just economical but eco friendly as well. People swear by pressure cooking because it is said that the natural flavors of foods are evoked when they are cooked in a high-steam medium.

Although the normal boiling point of water is 212 degrees Fahrenheit, the same can reach up to 250 degrees Fahrenheit in a pressure cooker. This is because of the extremely tight-fitting lid which does not allow the steam to escape and this causes an increase in pressure within thus inducing the temperature to soar above the normal boiling point of water. Therefore a whole chicken which generally takes about an hour to cook in regular open-pot cooking will require only 15 minutes to be thoroughly cooked.

Since pressure cookers are mostly used in kitchens therefore they call for a lot of washing and cleaning. To facilitate this they are generally made from special metal alloy and other rust-proof components so that one does not have to deal with its corrosion and it is safe for cooking food at the same time. These cookers are a must-have for all health-conscious people because they steam-cook the food and retain the vitamins and essential nutrients, thus making the food healthier.
